Vacation - Day 1

I have too much bliss to take in today (and a much needed shower to take after working out), so here's a laugh from Irish Fest:

And my Sailor Jack Muffin Recipe (King Arthur Flour Cookbook) I made last night:

Raisin-and-spice mixture ½ C sugar ½ C brown sugar 4 tsp ground cinnamon 1 tsp salt 1 tsp ground ginger ¾ tsp ground nutmeg ½ tsp ground cloves 1 C water ½ C raisins 2 Tbsp molasses Muffin batter 1 C whole wheat flour ½ C oat flour ½ C oats 1 tsp baking soda ¾ tsp baking powder 1/3 C vegetable oil 1 large egg Glaze ½ C confectioners’ sugar 2 tsp fresh lemon juice 1 tsp milk

  1. Place raisin-and-spice mixture in saucepan and cook until mixture comes to a boil. Simmer for 5 minutes, remove, and let cool.
  2. Whisk together dry ingredients of Muffin Batter mixture. Add cooled raisin-and-spice mixture, oil and egg. (don’t overmix!)
  3. Scoop batter into muffin tins, and bake for 20 – 23 minutes at 375°.
  4. Mix glaze, tip muffins out so they are bottom-side up, and glaze.
